Cherry Scones....So
good, you may have to make a second batch for everyone else.
Merrie adapted this recipe from One Bite Won't Kill You by Ann
Hodgman.
They were a big hit
among her partners during our January car trip to Ohio.
1 C dried cherries
or other dried fruit of your choice
8 T (1 stick)
butter
1/4 tsp salt
1 C heavy cream
1/2 tsp baking soda
1 tsp baking powder
2 1/4 C flour
1 tsp vanilla
3T sugar
additional sugar
Preheat oven to 350
degrees.
Using a food processor, combine flour, sugar, baking
powder, soda, and salt. Cut in butter using on/off
pulses until the mixture resembles coarse crumbs.
Dribble in the vanilla and cream. Dough will be
sticky. Cover work surface liberally with sugar, dump
out dough and knead in cherries. Pat into a circle
3/4" thick. Cut into 8 wedges. Place them on a lightly
buttered cookie sheet, about 1" apart.
Bake for 20 minutes.
