Plum Crisp

This delicious desert comes to you at the height of plum season. Fresh Italian prune plums make absolutely delicious baked good. You can use them in pies, muffins, tarts--just about anything you might use apples for. Plum Crisp is one of Katie's favorite dishes to bring to a late summer or early fall potluck; it's easy as well as tasty.

Pre-heat oven to 375 degrees.

Place in an 8"x11" pan:

6 cups of pitted, quartered, fresh Italian prune plums.

Blend gently with a pastry blender or the fingertips:
3/4 cup flour,
3/4 cup packed brown sugar,
6 tablespoons of unsalted butter,
1/4 teaspoon salt,
1 teaspoon cinnamon

Spread this crumbly mixture over the plums. Bake about 35 minutes.

It's even better topped with vanilla ice cream or whipped cream.
