Want a Quick Sweet Treat? Try The 321 Cake!

Sometimes you just need a little something sweet but you don't want to go out, you don't really want to bake, and you want it NOW. Whip up a 321 cake!  Because you cook it in the microwave in one minute, it is a perfect dessert for warmer weather when you can't stand the idea of turning on the oven. Merrie, one of the owners of Quilters Corner, made the dessert pictured for her husband while he was watching March Madness basketball. Okay, she made one for herself, too... The basic cake is only 80 calories, and then you can top it as you like - with real whipped cream and caramel sauce like Merrie did, or perhaps with healthier toppings like fresh fruit or low fat frozen yogurt.

The key is to start with a box of angel food cake mix, which makes it rise and be airy. The version shown mixed a yellow cake mix with the angel food cake mix. You can add any flavor of cake mix - we found that chocolate works great, but the result with white was rather boring.  If you use a spice cake mix or a carrot cake mix, we suggest that you add more seasonings as they get diluted from the angel food cake. Merrie tried substituting milk for the water, but the result was gummy. You make a single serving at a time and the recipe makes a lot, so you have plenty of opportunity to experiment. 321 Cake Recipe

1 box Angel Food cake mix
1 box any other flavor of cake mix
Combine both cake mixes in a large zip lock bag.

To make one serving, place 3T of the combined cake mixes in a microwaveable coffee cup.
Stir in 2T of water. Make sure you get the bottom edges.
Microwave on full strength for 1 minute.
Slide a butter knife down the sides to help "unstick" the cake, and invert it onto a plate.
Top it with ice cream, whipping cream, frozen yogurt, fruit, sauces, etc.
